fab. vegan recipe of the day: Valentine’s Day chocolate truffles

Today (14th February), Mikki Douglas posted two fab. vegan recipes for St Valentine’s Day on her PlanetMikki blog titled ‘Vegan Valentine’s Day | Truffles & Brownies made with LOVE’.

‘… Valentine’s Day is synonymous with chocolate, but also love. In keeping with love, I am giving up my famous vegan, gluten free chocolate dessert recipes so you can express your love to your family and your Valentine.

This is also a way to show love and compassion towards the egg and dairy animals that live in suffering just so we can eat their eggs and drink their milk.

So this Valentine’s day, let’s practice love and compassion to all living creatures. These dedacent recipes are rich, chocolately and oh so simple to make …

Mikki’s Easy Chocolate Truffles
2 tbsp organic cocoa powder
1 cup organic raisins
1 cup organic dates
½ cup chopped almonds
¼ cup organic coconut flakes
2 tbsp agave nectar
1 cup Enjoy Life dairy, soy and gluten free chocolate chips (Whole Foods)
Add raisins, dates, coconut & almonds to food processor. Blend until is forms a ball inside processor. Add cocoa powder and agave. Blend until smooth. (if too moist add additional dates) Scoop out about 1 ½ tbsp out and form a ball, roll in cocoa powder, then dip in melted chocolate chips. Layer on wax paper and let chocolate coating set up in fridge for 30 min, save in a sealable container.
