Yesterday (2nd February), Michele Borboa posted a fab. vegan recipe on her Vegan she knows web-site titled ‘Vegan chocolate cake with fruit’.

‘… Whether you need a special treat for a healthier Valentine’s Day dinner or simply like to always have a dessert on hand to satisfy your sweet tooth, this easy chocolate cake will quickly become your favorite. Adding the fruit gives it a nutrition boost, too. Use whatever fruit you have on hand.

Vegan Chocolate Cake with Fruit

Serves 10

Ingredients:

  • 1 (18.5-ounce) box Betty Crocker Chocolate Cake Mix
  • 1-3/4 cup vegan plain yogurt
  • 1/2 cup unsweetened applesauce
  • Powdered sugar
  • Orange slices, berries, or other fruit

Directions:

  1. Preheat oven to 350 degrees F. Grease and flour a 13×9-inch baking dish.
  2. In a large bowl, beat together cake mix, yogurt, and applesauce until blended and smooth.
  3. Pour batter into the prepared baking dish.
  4. Bake according to box directions or until a cake tester inserted in the center comes out clean.
  5. Transfer to a wire rack and allow cake to cool.
  6. Cut slices or squares and serve dusted with powdered sugar. Serve with fruit …’
